Easy As Pie Broccoli Bacon Quiche

I love quiche and this by far is the best and easiest way to make a flavorful yummy breakfast treat! I used to make this quite often for playdates and it was always a hit. Well the other day I was trying to think of something not only easy but easy on my tummy (I had hoped). The past couple of weeks have been painful and not so much fun hence why I have not been blogging. I have a gastric ulcer that occasionally acts up...well this time it's been pretty bad and i'm still having problem eating and keeping it down, but I digress. Anyways this is my favorite recipe for quick and easy quiche anyone can make.

1 Frozen Deep Dish Pie Crust
1 Cup Half and Half (I have found that using regular Vit D milk works too)
1-2 Cups Frozen Broccoli Flowerets (Qty is based on how much you like broccoli)
4-6 Strips Oscar Myer Thick Cut Pre Cooked Bacon (you can use any brand)
1-1 1/2 Cups Packaged Shredded Swiss Cheese
4 eggs
Salt and Pepper To Taste

This is how I make the quiche, you can change the instructions if something better works for you.

Preheat Oven to 350

In a micro safe bowl I add the frozen broccoli and about a 1 to 1 1/2 cup water. Steam broccoli until tender (you can also use the Birdseye Broccoli Steamers which works great and cuts down on dishes)

Scramble the eggs in a bowl add your cheese, salt, pepper and mix together. Set aside.

Plate your bacon (I like to use 6 strips...everything is better with bacon!) Micro according to directions.

Place you frozen pie crust on a cookie sheet. Dump your broccoli into crust and spread it out to cover the floor of the crust. Crumble the bacon on top of the broccoli then pour your egg and cheese mixture on top. I like to move around the broccoli a bit to make sure the egg mixture gets into all the nooks and crannies.

Place in oven a bake for 30-45 minutes or until knife comes out clean. Let quiche set out of oven for 3-5 minutes and serve...sooo yummy!
