Bacon, Onion and Gruyere Frittata {recipe}

This was posted a few hours before the big scam reveal took over our weekend. So I am reposting it to todays date so we can all enjoy a little bit of yummy goodness on a Monday morning :)

The other week I had Michelle aka Muffin Tin Mom and Laura aka Semper Fi Momma over for a mommy breakfast get together. This was a first IRL (In Real Life) for Michelle and I meeting Laura and can I just say that she is too awesome! I am so glad to finally meet her. So for this special get together I decided to make a Bacon and Onion Frittata. It is so so easy and so so delish! The recipe is from my favorite cookbook (see previous post here).

This recipe calls for 10 small jarred onions. WTF is jarred onions? Apparently after walking the isles in my grocery store I realized they are those little cocktail onions..alrighty then. 

4-5 slices Thick Cut Bacon (I used smoked)
10 small jarred Onions
1 Tablespoon Oil (I used Grape Seed)
12 eggs
1 Tablespoon Unsalted Butter
Black pepper/Salt
1-2 cups shredded Gruyère Cheese
Large Fry Pan, oven safe

Chop bacon add to frying pan with 1 Tablespoon heated oil.  Cut mini onions in quarters and add to bacon. Cook bacon well but NOT crispy. Remove bacon and onions to a plate with a paper towel. Wipe out frying pan.

Preheat oven 400

Melt 1 Tablespoon butter in pan. Lightly scramble eggs in a bowl. Add pinch salt and black pepper to taste. Add eggs to the heated frying pan. Pull eggs from the sides to the middle of the pan letting the wet egg fill the voids in the pan. When you've noticed the top of the eggs is "wet" but not runny evenly sprinkle the bacon/onion mixture over the eggs. Then top that with your shredded Gruyère cheese. Sprinkle fresh or dried Thyme over top and pop the pan in the oven until cheesy is bubbly, melted and your eggs are set.

Slide onto cutting board, let cool and slice with a pizza wheel. Serve and enjoy!!

I would have no idea what jarred onions are either. I'm so glad you cleared it up:) I am glad you had another fabulous IRL meet up with a local blogger...but I can't help being a little (lot) jealous too!
