Fruit Stuffed Cinnamon Swirl French Toast {recipe}



This weekend I wanted to a make a special breakfast for my girls. Saturday we were snowed in so I thought it seemed like a good day to experiment with what I had in the house. After peaking through the cabinets, pantry and fridge, I knew what to do!

Ingredients:

Fresh Fruit, sliced
1/3 cup Cream Cheese
1 tsp Sugar
Cinnamon Swirl Bread (I used Thomas)
2 eggs
1 tablespoon milk


Slice fresh fruit. Berries can be left whole.




Cream together sugar and cream cheese. Adjust sweetness to your preference. I did not want the sugar to over power the natural sweetness of the rip fruit so I only added 1 tsp.



Spread the cream cheese mixture on both sides of your bread



Next layer one side with fruit, add as much as you like. Now close the sandwich and lightly smash down.


Heat a griddle or skillet and spray with cooking spray or melt a little butter.
In a small bowl beat the eggs and add milk, mix. Dredge the fruit sami in the egg mixture. Be sure to coat both sides well.
Place the coated sami on the hot griddle or skillet.


Cook until golden brown and flip. Repeat cooking on the second side.


When both sides where golden brown I stood my stuffed sami up on it's sides to seal the edges. I repeat for the next 3 sides.
Serve warm with syrup and more fresh fruit or homemade whipped cream!
