These cookies are AMAZING! If you love oatmeal raisin cookies, you have to try it with cinnamon chips. It offers a whole new layer of deliciousness. What I really like, the chips are not overly sweet and not too cinnamony so that it does not over power the nutty oat flavor I love so much.
2 sticks softened butter
1 cup light packed brown sugar
1/3 cup granulated sugar
2 eggs
1 1/2 tsp vanilla
1 1/2 cups flour
1 tsp baking soda
2 1/2 cups quick cooking oats
10 oz package Hershey's cinnamon chips
1 cup raisins
Preheat oven to 350
In a stand mixer (or hand mixer) cream butter, brown sugar and granulated sugar until creamy.
Add eggs and vanilla, mixing well.
Add flour and baking soda to mixture and mix until flour is well incorporated. Add oats and mix well.
By hand fold in the cinnamon chips and raisins until well mixed.
On an ungreased cookie sheet (or lined with parchment paper) drop cookie batter by the spoonful or as I did, an ice cream scoop works awesome too.
Bake for 10-12 minutes or until lightly browned. Remove to cool on a wire rack.

Did I see an aqua Kitchen Aid mixer in these pictures?! When did you get it? Welcome to the club! :) Haha! I have a bag of cinnamon chips in the cabinet and I have been on an oatmeal cookies kick, these look great!
