This is one of my favorite ground turkey recipes. It is super easy, wicked tasty and healthy too. Prep time is only 5 minutes so this is a perfect last minute recipe. This recipe comes from Great American Recipes. I started collecting their recipe cards back in the early 90's, and out of the hundred of cards I have in my collection, this one was my all time go to recipe. With all the moving I have done over the past decade, they got boxed up and never to be heard from again. That was until this move, I knew this was my favorite move yet :)
So for my family this past week, I made them. Smelling the aromatic herbs while it cooked brought back so many memories of days past. I am glad I can now share this with my family, and they all loved it as much as I do.
Summertime Turkey Patties
1 lb ground turkey
1/4 tsp salt
1/4 tsp pepper
1/4 tsp each dried sage, thyme, marjoram and rosemary
4 Tbsp minced green onions
1 egg white
1/2 cup bread crumbs (sometimes I use Italian seasoned bread crumbs)
2 Tbsp olive oil
White Wine Mustard Sauce
1/3 cup chicken broth
1/3 cup dry white wine
2 tsp Dijon Mustard
2 tsp cornstarch
1 Tbsp water
Garnish:
Green onions, minced (optional)
Instructions:
1) In a large bowl combine the ground turkey, salt, pepper, sage, thyme, marjoram, rosemary, 2 tablespoons green onion, egg white and bread crumbs. Stir with a fork to combine thoroughly.
2) Shape into 4 patties about an 1 inch thick. Heat oil in a large heavy skillet.
3) Cook patties over Med heat for 5-7 minutes on each side. The sides should be crusty and inside is completely cooked.
4) Remove patties to a serving dish and keep warm.
5) Add remaining green onions to hot skillet. Saute for approx a minute.
6) Add broth, wine and mustard, stirring up the bits in the skillet. In a small bowl mix cornstarch in 1 Tbsp water.
7) Then skillet sauce is boiling add the cornstarch mixture. Cook for a minute until sauce has just thickened.
8) Pour sauce over patties, sprinkle with green onion and serve.

@Nancy - Hmmm, i'm not sure. I actually do not think I have ever had venison. Is it gamey? It might taste nice with the white wine and mustard? You'll have to let me know :)
