Panko Encrusted Fried Zucchini


I received some more amazing zucchini from my neighbors garden. With all this produce I didn't know what to do with to all since I am the only one whom will eat it. So I went to Pinterest to find some recipes and found this one from Real Mom Kitchen. Perfect! I loooooove fried zucchini so I knew what I had to do. Cook!

Vegetable oil, for frying
1 large zucchini cut into 1/4 rounds
1/2 cup all-purpose flour
2 cups cups Bertolli italian panko bread crumbs
Salt and freshly ground black pepper
2 eggs, lightly beaten
1/4 cup water
Parmesan cheese
ranch dressing or marinara sauce

In 3 separate add bowls flour into the first, eggs, water, salt and pepper into the second and Italian panko in the third (if you do not have Italian panko add Italian dried spices to plain panko) Dredge the zucchini in the flour, followed by the spiced egg wash and finally in the panko. Press zucchini into the panko and cover both sides.

Place the breaded zucchini in the hot oil and fry until golden brown. One fry a few rounds at a time, do not crowd the pan. When ready remove from fry pan to a paper towel lined plate and sprinkle with Parmesan. Serve with ranch dressing or marinara sauce (ranch is my fav).

yummmm! Fried zucchini is my favorite! Unfortunately I am the only one in the house that will eat it!

Whenever I fry I use panko! It's the best! I might try and make this....maybe my kids won't realize it's a "funny" vegetable! LOL!
