Zucchini recipe again! Since I have been blessed with all this amazing produce from my neighbors I have been cooking and baking up a storm. I have to say, my freezer stash has never looked better...lol
Here is a simple, low sugar bread recipe that incorporates, zucchini, walnuts and mini chocolate chips. This recipe makes 2 loaves which is perfect...one to eat now and one for the freezer, enjoy!
Ingredients:
3 cups flour
1 1/4 cups sugar
1 teaspoon baking soda
1 teaspoon baking powder
Pinch salt
2 teaspoon all spice or cinnamon
2 cups grated zucchini
3 eggs
2 teaspoon vanilla
1 cup vegetable oil
1 cup chopped walnuts
1 cup mini chocolate chips
Preheat oven to 325 and prepare 2 loaf pans. Mix all dry ingredients in a large bowl. In a smaller separate bowl combine the wet ingredients to include the zucchini. NOTE: Unlike in my quiche recipe, do not drain the zucchini for this recipe.
When ready, add the wet to the dry and combine. Once everything is mixed well fold in the walnuts and mini chocolate chips.
Bake for 45-60 minutes or until an inserted butter knife comes out clean. Cool on a wire rack.
