Chicken Scallopine with Sage and Fontina Cheese



Hey blogging lovelys we tried a new reicpe tonight! You might remember my little rant a little while back called "No More Mrs Nice Mommy", well I am happy to report that it is a slow going process but my family has been nothing but wonderful about it.

Last weekend while flipping channels I came across one of my fav channels...the Cooking Channel, where Giada De Laurentiis (love her) was doing an episode about viewer favorites. One this episode was a recipe for Chicken Scallopine with Sage and Fontina Cheese. She made it look so easy and delish and while watching it C walks into the room, cuddles up with me on the couch and starts to become very involved in the show (I was amazed that she could sit still for more than a minute). At the end of the show she asked if I could make that because it "looks sooooo yummy".

So tonight was the night, everyone (including hubby) ate everything all gone and the girls were very satisfied with the dish. I thought for sure the fresh sage leaf and Fontina cheese (a stronger smelling cheese than I normally use for them) would lead to some objections but to my surprise, hubby boasted about the flavor of the Sage and the girls said nothing negative...finished their plates.

Along with Giada's recipe I added a side of Farfalle pasta drizzled with Giada's Garlic Vinaigrette I found at Target! That's right, she has a food line along with her cookware at Target and let me tell you...this vinaigrette is amazing!

The only thing I didn't like (and it was my fault) is that my chicken was not thin enough so most of the cheese melted out into my sauce..bummer. So next time (and there will be a next time) I will make sure my chicken pounded a lot thinner. Other than that it is delish dish!
