A few weekends ago hubby, the girls and myself went to a apple picking farm in Julian, CA. The girls had so much fun running up and down the rows of apple trees and picking as many apples as they could and even tasting the different varieties along the way. So what to do with a bag full of fresh picked apples? Why, make pie of course!
Pie Crust:
I use a frozen deep dish crust. You can make your own but do not ask me how because I have no idea.
Filling:
6 medium apples
1/2 cup packed brown sugar
1 tablespoon lemon juice
1/2 tsp cinnamon
1/2 tsp fresh nutmeg (optional)
2 tablespoons all purpose flour
Crumb Topping:
1/2 cup all purpose flour
1/3 cup rolled oats
1/4 packed brown sugar
1/2 tsp cinnamon
2 tablespoons apple juice
2 tablespoons cold real butter
1/4 cup chopped walnuts
Preheat oven to 375
Thinly cut your apple slices. The thicker the cut the longer it takes to soften. We like a crisp bite to our apple pies so I slice mine a little thicker. Toss the apples in a large bowl with the brown sugar, lemon juice, and spices. Once covered sprinkle 2 tablespoon of flour and continue tossing until mixed. Pour your apples into the frozen deep dish pie crust. Bake for 30 minutes.
Ready for the oven...
While the pie is baking make your crumb topping. In a medium bowl mix the flour, brown sugar, cinnamon, oatmeal and walnuts. With a fork cut in the butter. Once the butter is cut in evenly add the apple juice and continue to mix.
After the 30 minutes is up take your pie out and evenly cover the top of the pie with your crumb topping. Cover the crust edges with foil or I use a pie shield. Return it back to the oven for another 20 minutes and the top is nice and golden brown.
After 30 minutes in the oven, the topping is piled on and pie shield placed...
20 minutes later, nice and golden brown. Serve with vanilla ice cream and a caramel drizzle.
